This lemon muffin recipe is new in my recipe book. It was a wish of my husband to have lemon muffins on his birthday last January. Our guests loved the muffins, much more my Christof.
Ingredients
12 pcs Muffin Cups
150 g Margarine (room temperature)
250 g Flour
120 g Sugar
1 Tablespoon Vanilla Sugar
1 Tablespoon Baking Powder
a Pinch of Salt
2 Eggs
2 Tablespoon Fresh Lemon Juice
2 Lemon only grated skin (organic quality)
Glazing
2 Tablespoon Fresh Lemon Juice
100 g Powdered Sugar (sifted)
Procedure
- Preheat oven 180 degrees Celcius.
- Place muffin forms in muffin molds.
- Combine and mix dry ingredients in a mixing bowl; flour, baking powder, and vanilla sugar.
- Beat the margarine with an electric mixer until soft and creamy. Add sugar gradually then add eggs one after the other. Mix for 2 minutes. Add combined dry ingredients gradually. Do not over mix or else the muffins will be suggy (too tough and dense).
- Put the batter in the prepared muffin forms. Use a spoon to pour the batter in the cups.
- Bake the mixture for 25 minutes.
- Cool the muffins.
- Put 2 tablespoon lemon juice in 100 g sifted powdered sugar. Mix them thoroughly.
- Glaze the muffins with sugar mixture using a cake brush.
- Decorate your muffins as you wish. ex. Sugar pearls or chocolate drops for kids or simply grated lemon skin.
- Serve and enjoy!
